In a large pan heat oil. Add chopped onions and sauté until golden, over medium-low heat. stir occasionally. 2. When onions are golden add grated garlic and ginger. Stir and cook for 2 minutes. Add chopped tomatoes and cook, stirring occasionally, until soft. Add curry powder and cook, stirring, for 2 minutes. Add chicken breast, season with salt and pepper, cook for 5 minutes, until golden. Cover the pan and cook for 2-3 minutes more. Add water, cover and cook 10 minutes. 3. Add coconut milk/cream, season with garam masala and salt, stir, and cook until lightly thickens. Simple Chicken Curry | Chicken Curry For Bachelors | Easy Chicken Curry | Simple Chicken Curry For Beginners | Chicken Gravy | Chicken Curry | Bachelor Chicken Curry | Chicken Masala Powder Curry | Chicken Masala Ingredients for Bachelor Chicken Curry Recipe: (Tsp- Teaspoon; Tbsp- Tablespoon ) - Chicken-500-600 gms (curry cut with bones) - Onion- 2.5 medium sliced (200 gms) - Ginger Garlic paste-1 tbsp - Garlic cloves-7-8 (or 10) - Tomato sliced-3 medium - Green chillies cut- 4-5 - Curry leaves- 15-20 - Mint leaves- 2 sprigs Spice Powders: - Turmeric powder- 1/2 tsp - Red chilli powder- 2 tsp - Kashmiri Chilli Powder-1/2 tsp - Coriander powder-2 tsp - Garam Masala powder-1/2 tsp - Pepper powder-1/2 tsp - Cumin powder-1/2 tsp - Kasuri Methi- 2 tsp - Salt - 1 tsp - Oil-1/2 cup (7 tbsp) - Water - 150 ml Preparation: - Slice the onions & tomatoes and peel the garlic cloves. - Also cut the green chillies into 1 inch pieces and chop the coriander leaves. - Take out the curry leaves and the mint leaves. Process: - Take a pressure cooker and heat oil. - Now add the chicken pieces with bones and fry 1-2 mins on high heat till the chicken turns white. - Now add the sliced onions, garlic cloves, ginger garlic paste and green chillies & give a stir on high heat for 1-2 mins. - Add the sliced tomatoes, all the spice powders, curry leaves and mint leaves. - Cook on high heat for 3 mins till little fried and oil separates. - Add the salt and cook on medium heat for another 5 mins. - Add the water and mix well. - Pressure cook on high heat till 1st whistle and on medium heat for 2 more whistles. Process: - Heat oil in a pan or kadai and add the chopped onions. - Fry on high heat for 10 mins till brown in colour. - Add the crushed ginger and garlic and fry on medium heat for 2 mins. - Add the chopped tomatoes and green chillies and fry on medium heat for 2 mins. - Add the turmeric powder and mix & fry on medium heat for around 3 mins till tomatoes are soft. - Now add the chicken pieces and fry on high heat for 2-3 mins till the chicken pieces are browned. - Add the readymade chicken masala, red Chilli powder and salt, mix and bhunno on high heat for 5 mins. I tried my best to explain everything in detail and all the tips and tricks possible that go into making chicken curry. Ingredients for making a chicken curry - serves 6 to 7 * 2.2 lb/ 1 kg chicken on bones. Please note that I preferably use chicken on bones for making a chicken curry. It's not that you cannot use boneless chicken but the gravy won't be as tasty. * 2 large potatoes quartered or medium potatoes halved. I did not boil the potatoes before adding them. * 1 very large onion or 2 medium sized onions. I used quarter of the onion for making a paste. * 2 inch length ginger * 10 large garlic cloves * 1 large tomato * 2 green chillies (optional) * 2 large dry bay leaf * 1 inch length cinnamon stick * 6 to 7 green cardamoms * 4 to 5 cloves * 1/4 th cup plain unflavored yogurt * 1 teaspoon turmeric powder * 2 heaped teaspoons Kashmiri red chilli powder. You can even use regular red chilli powder but in that case please use less. Adjust the proportion of any chilli powder according to your tolerance of heat level. * 1 tablespoon ground coriander * 1 teaspoon garam masala powder.If you want to make garam masala powder at home then here is the recipe - 🤍 * 1/4 th teaspoon ground mace (optional) * 1/4 th teaspoon ground nutmeg (optional) * 2 teaspoons salt (add less to start with, you can always add later) * 1 teaspoon sugar(optional) * 1 cup hot water. Transfer it to a bowl and keep it aside for further use. For Chicken Marination In a bowl, add chicken, salt to taste, degi red chili powder, turmeric powder, curd, oil and mix it well. Keep it aside to marinate for 10-15 minutes. For Ginger Garlic Paste Ina mortar pestle, add ginger, garlic, green chillies, salt to taste and grind it coarsely. Keep it aside for further use. For Chicken Curry In a handi or saucepot, add oil, ghee, once it's hot, add cinnamon stick, cloves, green cardamom and let it splutter. Add prepared ginger garlic paste, onions and saute it well until golden in color on medium flame. Add degi red chili powder, turmeric powder, coriander powder and saute it for 2-3 minutes. Add prepared tomato paste, salt to taste, sugar and cook well for a while. Add marinated chicken and saute it for a minute. Add water, cover it with the lid and cook it for 20-25 minutes until cooked well. Finish it with some coriander leaves and mix it well. Transfer it to a serving bowl or dish and garnish it with coriander sprig. Ingredients Chicken – 1 kg Onion -3 nos Green chilli – 2 nos Tomatoes -2 nos Ginger -1 nos Garlic – 8 to 9 nos Curry leaves – 3 sprigs Grated coconut -1 cup Red chilli powder – 2 tbsp Coriander powder – 1 tbsp Turmeric powder – ½ tbsp. Cardamom- 2 nos Cinnamon – 1 nos Cloves- 2 nos Pepper seed – 1 tsp Fennel seed – 1 tsp Salt – 1 o2 tsp Oil – 2 or 3 tbsp Method Heat oil in a pan add cardamom, cinnamon, cloves, pepper seed and fennel seed saute them well. Add grated coconut and saute them well. Then add some redchilli powder , coriander powder and turmeric powder ,roasted them well and set aside. Grind the roasted coconut and other ingredients into fine paste and set aside. Again grind ginger and garlic into fine paste and set aside. Heat oil in a pan add fennel seed ,lets crackled . Add chopped onion saute for 2 to 3 minutes. Add grinded ginger garlic paste,green chilli and curry leaves saute them well. Add chopped tomatoes and salt saute them well. Cover and cook till the tomatoes become soften. Add grinded coconut masala and mix them well. Then pour some water into the masala bowl and add the water into curry pan. Add sufficient amount of water into the pan ,cover and boil them well. Add cleaned chicken pieces mix them well. Cover and cook till the chicken become soften . Remove from fire and set aside. Full written recipe Dhaba style chicken curry Prep time: 20-25 minutes Cooking time: 25-30 minutes Serves: 4-5 people Ingredients: For marination • Chicken 1 kg • Salt to taste • Haldi (turmeric powder) powder ½ tsp • Lal mirch powder (red chilli) powder 1 tbsp • Ginger garlic paste 1 tbsp • Dahi (curd) 3/4th cup (whisked well) For curry • Ghee 2 tbsp + oil 1 tbsp • Whole spices: 1. Jeera (cumin seeds) 1 tsp 2. Dalchini (cinnamon) 1 inch 3. Laung (cloves) 3-4 nos. 4. Hari elaichi (green cardamom) 3-4 pods 5. Badi elaichi (black cardamom) 1 no. 6. Tej patta (bay leaf) 1 no. • Onions 5 medium size / 400 gm (chopped) • Ginger garlic & green chillies ½ cup (roughly chopped) • Powdered spices: 1. Haldi (turmeric) powder ½ tsp 2. (slit) Method: • Wash & clean the chicken well and add in a mixing bowl, further add all the remaining ingredients of the marinade, mix well and keep it marinated until used for making the curry. • Now, for making the curry, set a wok or utensil as per your preference to make the chicken curry, add ghee, whole spices and onions, stir and cook until the onions are translucent. • Further add, ginger, garlic & green chillies, stir and cook for 3-4 minutes on medium flame. • Lower the heat & add the powdered spices, mix well and add few splashes of water to avoid the spices from burning. Increase the flame to medium heat, stir and cook until the ghee is released. • Now add tomatoes & salt to taste, stir & cook well for 8-10 minutes. • Further keep stirring & cook the masala really well until the ghee has separated & the tomatoes has mushed well with the masala. You can add some hot water if the masala gets too dry during the cooking process. • Further lower the flame and add the marinated chicken, stir continuously for 2-3 minutes to avoid the curd from curdling, make sure you do not be too harsh while stirring, as the chicken pieces may break. • Increase the flame & cook on high flame for 5-6 minutes, further lower the heat to low & cover & cook for 10 minutes. Stir in intervals. • Further cover & cook for 20-25 minutes on low flame until the chicken is cooked & tender. • After cooking for 20-25 minutes, add the garam masala, kasuri methi, ginger and green chillies, stir well, at this stage you can serve the chicken as latpata chicken masala finish with some freshly chopped coriander leaves, or else you can add hot water and make chicken curry just the way am going to do. • As am making the tari wala chicken, ill add hot water, stir and bring to a boil & let it simmer for 5-6 minutes, you can adjust the quantity of water depending on how thin or thick you want your chicken curry to be. • After simmering, check for the seasoning and adjust accordingly, finish with freshly chopped coriander leaves. Your dhaba style chicken curry is ready, serve hot tandoori roti or any indian bread of your choice. Homemade garam masala Ingredients: • Sukha dhaniya (Coriander seeds) - 5 gm • Sabut kaali mirch (Black peppercorns) - 5 gm • Jeera (Cumin seeds) - 5 gm • Choti elaichi (Green cardamom) - 5 gm • Badi elaichi (Black cardamom) - 10 gm • Dal chini (Cinnamon) - 5 gm • Chakri phool (Star anise) - 5 gm • Saunf (Fennel seeds) - 3 gm • Laung (Cloves) - 5 gm • Tej patta (Bay leaves) - 5 gm • Salt a pinch Method: • Set a pan on medium heat, heat the pan until its moderately hot, add all the spices and swirl pan or stir with a spatula to avoid the burning of spices, lower the flame & roast the spices until aromatic. • Remove on a plate & cool down to room temperature, add the roasted spices in a grinding jar, add a pinch of salt as well, grind to make a fine powder. • Once grinded, use a sieve and sift the powdered masala to get even fine powder. • If the spice chunks in the sieve are too much regrind to make fine powder to avoid wastage. Black cardamom, बड़ी इलायची 1 no. Green cardamom, हरी इलायची 3-4 no. Cloves, लौंग ¼ tsp Dry fenugreek seeds, मेथी दाना ½ tsp Cumin seeds, जीरा ¼ tsp Mustard seeds, सरसों के बीज 1 tbsp Oil for roasting Chicken, तेल तलने के लिए For Amritsari Murgh 1 ½ tbsp Oil, तेल 2 no. Bay leaf, तेज़पत्ता 2 no. Green chillies, less spicy, हरी मिर्च 3 medium Onion, chopped, प्याज 1 tbsp Butter, cubed, मक्खन 2 tsp Prepared Masala, तैयार किया हुआ मसाला 2 medium Tomatoes, chopped, टमाटर Little water, पानी 2 tbsp Curd, beaten, दही Salt to taste, नमक स्वादअनुसार Roasted Chicken, भुना किया हुआ चिकन ⅓ cup Water, पानी 1 tbsp Coriander leaves, chopped, धनिया पत्ता ½ tbsp Butter, cubed, मक्खन For Garnish Coriander sprig, धनिया पत्ता Process For Chicken Marination In a bowl, add chicken, ginger garlic paste, dry fenugreek leaves, coriander powder, degi red chili powder, turmeric powder, ghee, salt to taste, curd, oil and marinate it well. Rest it for 20-30 minutes and keep it aside for further use . For Masala In a plate or tray, add black peppercorns, coriander seeds, black cardamom, green cardamom, cloves, dry fenugreek seeds, cumin seeds and mustard seeds. Transfer it into a mixer jar and make a fine powder. Keep it aside for further use. For Roasting Chicken In a flat cast iron or tawa, add oil, once it’s hot, add marinated chicken and roast it until tender from both the sides. Transfer it to a bowl and keep it aside for further use. For Amritsari Murgh In a shallow pot or handi, add oil, once it’s hot, add bay leaf, green chili, onions, butter and saute it until the onions are golden in color. Add prepared masala, tomato and saute it well. Add water, curd, salt to taste and cook it well for a minute. Add roasted chicken and saute it well. Add water and cook for 10-12 minutes on moderate heat. Finish it with some butter and coriander leaves. Transfer it to a serving bowl or plate and garnish it with coriander sprig.
